Chicken Pitas
This was inspired by my favorite sandwich at my favorite restaurant, Alexander Michael’s.
3-4 chicken breasts
4 pitas/flatbread
1 tomato
bunch of green leaf lettuce
4 slices provolone cheese
honey mustard dressing (we love Ken’s)
Season 3-4 chicken breasts with salt and pepper. Cook in skillet on stovetop with some olive oil. Cut chicken into strips once cooked. While the chicken is cooking, dice a tomato and tear some green leaf lettuce. After taking the chicken out of the skillet, add more olive oil and heat the pitas, one at a time, until warm and soft.
Lay the provolone cheese on one side of the pita, add the chicken, tomato, lettuce, and honey mustard dressing. Fold it like a taco and enjoy!
My sister’s family makes a different version: they saute peppers and onions with the chicken, to make it more like a chicken philly.
You can also add ranch or caesar dressing instead of honey mustard.
We serve this with baked french fries.
